Turkey Meets Italian Meatloaf

Meat Mix:
*1 lb of extra lean ground turkey
*1 tbsp salsa
*1/4 c oats
*1 tbsp plain nonfat Greek yogurt
*1 tbsp oregano
*salt substitute & pepper to taste (optional)
Sauce Mix:
*no sugar added tomato sauce (Hunts in a can)
*1 small can of mushrooms (optional)
*garlic & oregano to taste
Mix meat mix all together in a large bowl. I used my hands (even though touching raw meat makes me hurl inside!).
Press down into a loaf pan & bake at 350. When it's about 10 minutes from being done, spread sauce over the top & then finish cooking!
I used a smaller loaf pan since it was just 1 lb of meat. Adjust the size of pan if you use more or if you want a thicker loaf.... You get the picture!
I sliced into 15 thin slices so I can just eat a slice or 2 by itself or as a side w any dish! I also rinsed off the sauce from some of the slices so I could make a great sandwich!
Each slice is an average of 40 calories & a whopping 7 grams of protein!! A great, easy & versatile lean protein choice to have in the fridge!
