Just A Simple Omelet....

So another weekend is over & another week lies before us all! I hope you have all had a great weekend & feel ready to start the week tomorrow!
My week will be super busy as I am sure yours will be too!
I haven't been messing around in the kitchen all that much lately. So I have just been using my tried & true faves that I know I can always count on to be quick, tasty, healthy & figure friendly! Tonight, you guessed it..... I turned to the incredible edible egg, which is nothing new for me since I eat eggs all the time for dinner! What can I say?! I love eggs!! I made this omelet  kinda like a turkey sandwich with the egg as the wrap!  I just wanted to make them more dinner quality rather than breakfast quality - not that I don't loooove breakfast quality eggs by any means! I could eat eggs & toast for breakfast, lunch & dinner every day!
So, even though this isn't anything fancy I wanted to post in case you need a little reminder about eggs for a quick & easy dinner (or breakfast) that you may not have enjoyed in awhile!
I used 1 whole egg, 3 whites, 1 oz (or 1 thin slice) of deli turkey, 2 fresh tomatoes, just a pinch (not even 1/8 Cup) of 2% mozzarella cheese & a dash of Oregano (my favorite omelet spice!) on top to make this omelet! Paired with a side of steamed mixed veggies instead of toast & jelly & you have a fabulous dinner that is around 200 calories & about 22 grams of protein! ......
I'll take it! ;)

TGI Love Fabulous Food Friday!

The end of the week is finally here & I have to say I am sooooo glad! I am planning on curling up on the couch with my pink bubba keg full of H20 with my 2 furry friends laying next to me & watching a movie tonight!! I intend to fully enjoy this holiday weekend & start next week off more organized than I did the past couple of week! I have just been picking old workout routines every day that I went to the gym & preparing food as I need it instead of ahead. Running to the store whenever I need something, etc....... It really throws me off all week when I don't have things planned out!
It gives me an out of control feeling.......which I hate!
So, needless to say I have some planning & preparing ahead of me this Sunday but that's perfectly fine with me!
Today I bring you a breakfast, dinner & a snack that I ate this week! I may not have planned everything out but I still ate really tasty food!! ;)
Clean Egg McMuffin

I made myself an Breakfast Egg Muffin with 1 whole egg & 3 whites on a Healthy Life English Muffin with mustard &  a Diet Citrus Green Tea - which is my new beverage LOVE!!!!! If you haven't jumped on the Green Tea bandwagon yet, try it!!!! This was such a yummy & filling breakfast & a nice change from my regular oats or yogurt & oats! So quick & it would be so easy to prepare & have ready to just microwave & eat on the go if you were running out the door in the morning! Definitely better than any fast food breakfast sandwich would have been!! And so much healthier!!
Garden Veggie Burger & steamed veggies
This was probably my favorite dinner I had all week! I ate it tonight actually! A Bocca Garden Veggie Burger on a Whole Grain Sandwich Round topped with onion, a juicy ripe tomato & pickles! I had  steamed mixed veggies on the side sprinkled with Mrs Dash Garlic & Herb seasoning which is soooooo good!!! Totally tasty!!
Cinnamon Pumpkin & Oat Carb Smart Yogurt
And the week wouldn't be complete without a decadently jazzed up yogurt! This one is Kroger Carb Smart Carrot Cake flavored yogurt with a serving of pure pumpkin,  1/8 C of oats & a dash of cinnamon  nutmeg on top! SOOOOO YUMMY-FUL!!!!!! This would make a great smoothie too!!!!
Well, that wraps it up!
Have a super safe, healthy &
Beautifully Fit
hoilday weekend!

A Busy Week & An Omelet On Wednesday.....

Happy Thursday everyone! Have you missed me?! I have been MIA the past couple of days because I am trying to get my back patio ready for my upcoming birthday party next weekend! As I am sure most of you already know..... outside work is tough stuff! It'll show you what you're made of, that's for sure! I have moved (with the help of my mom) 200 concrete stones, laid five 40 lb bags of rock, planted flowers in several pots, hung wind chimes, sun catchers & lights, spray painted & hand painted like you wouldn't believe! I even hand painted a fairy statue that turned out super pretty! I am happy to say that the patio is almost all done,  but not yet! I will be posting pictures when it is so you all can see!
So, Tuesday I did my Jillian Michael's DVD Killer Buns & Thighs instead of my normal leg day at the gym & yesterday I just worked outside & didn't go to the gym at all! Gasp! ......But it's not like I sat around eating Twinkie's all day watching Seinfeld (I would NEVER do either, by the way!) Other than having lunch with my dear friend Miranda before she moves away, I worked outside all day, so I know I got a good all over workout!
I still miss my gym routine though! As soon as I am done blogging I am headed to the gym for arms, abs & cardio!  Then tomorrow I will be back in the gym for legs!
Due to running around like Tigger, I have been in the kitchen a lot less than usual this week, which has been kind of nice but then kind of haphazard when I am ready to eat because I don't have my food prepared, I don't have  a lot to choose from to make & whatever I eat, needs to be ready fast so I can get back at it! So, last night, since eggs are a favorite dinner food for me anyway, I decided on an omelet! I always pride myself on making a pretty omelet because I remember the days when it seemed the pans would never let me master the perfect omelet technique! I would lose agonize, cry & lose sleep wondering if I would ever be able to serve myself lest anyone else........the perfect omelet! .....ok, it wasn't really THAT dramatic but it was important! It still is! Every time I start to make one, I still doubt myself in the beginning!...... but then.......I look at my eggs in the pan bubbling & firming up & I realize.......nah! I still got it! And what's even greater about the omelet is that it's so versatile! Like the little black dress in your closet...... Yes, it's the same dress just hanging there on the hanger, but when you pair it with your favorite accessories & voila! It takes on a whole new look every time! Same as the omelet! Sure you can have just a plain cheese omelet.......it has it's time & place....... but why stop there?? Accessorize your omelet sister!!! Fill it with tasty, clean foods like grilled chicken breast, lean ground turkey or beef, broccoli, sweet peas, peppers, onions, tomatoes, any flavor of low fat cheese or anything else that you think goes great with eggs! You can top with nonfat Greek yogurt, salsa or even a healthier ketchup (Warning-ketchup on eggs if for serious eggers only!)!  You are the chef & it's your kitchen so have it your way! Just keep it clean! So, there is an egg-tastic idea for  dinner tonight or breakfast in the morning! Sometimes, when I feel especially motivated, I make 2 omelets & put the second one in a container to have the next day & believe it or not, a second day omelet is just as good as the first after you heat it! Eggs are a great source of protein & so low in calories! I usually make my eggs with 1 whole & either 2 or 3 whites. I never eat more than 1 whole egg a day but you can enjoy as many whites as you like! They are so figure friendly you may even want to eat them while WEARING your little black dress!

Classic Breakfast

j
It's the first day of Daylight Savings Time!
I have had a great weekend so far & am looking forward to today! I was really craving pancakes today (as I do every Sunday) so I actually spent an hour in the kitchen trying a new recipe from my Clean Eating cookbook...... but, unfortunately I have to say that I did not like that recipe & I will not be making them again! It's never fun to spend time making & cleaning up after something you cooked that you didn't even like, but unfortunately........ it happens sometimes! Especially when you are cooking clean because the ingredients you cook with can be tricky! All is not lost though...... I have another clean pancake recipe that I know I love & I will be sticking with it from now on.
So, I went with the classic omelet & pb & j toast! I made the omelet with w 1 whole egg, 3 whites & 1 piece of 2 % colby jack cheese. The toast is Ezekiel bread w 1/2 tbsp natural pb & 1 tbsp of strawberry jelly. Not exactly what I was craving........ but still a breakfast you can't go wrong with!........... Think I will have a good clean cheeseburger with some sweet potato fries for dinner tonight to make up for not getting my Sunday morning pancakes!

Simple Egg Fritatta

Well, here it is...... another end to the week! The weeks go by so fast!I spend so much of my time in the kitchen & although I enjoy cooking, I am going to make it my goal to take this coming Sunday or Monday to prepare all of my food for next week & see how that goes. It may take most of the day but I think i would rather do that than have to cook, plan & prepare every day throughout the week! I am at least going to give it a shot & see how it goes! I'll let you know!
Well, this week I have been really trying to consume more calories & make sure I am getting adequate protein to build muscle. It has been a challenge & a lot to keep up with! I love My Fitness Pal app on my iPhone! It is so quick & easy to track everything I eat & my exercises! It takes a little effort to get all of my recipes in as you add new ones but it is totally worth it! And, I can view my diary online, too! If you haven't checked it out & you have an iPhone, you should! If you have another kind of smart phone & don't already use a calorie tracking app, you should find the best one for your device & get tracking! It really helps to see what you are eating! You'd be surprised!
Tonight, I ate later than I like to eat because I worked late. So, I thought the incredible, edible egg fritatta  would be the perfect choice for dinner! It can be made a whole lotta different ways, too! ..........I like foods that you can mix 'n match!
Here is the lean & healthy recipe!:
1 carton of egg whites
2 whole eggs
4 oz cooked chicken breast
2 - 1/3 c steamed & drained sweet peas
2 tbsp salsa
1/4 c fat free or 2% mozzarella cheese

Pour peas into an oven safe skillet sprayed with butter cooking spray & place shredded chicken on top of peas. In a large bowl, mix container of egg whites & 2 eggs with a whisk until you see little bubbles. Add salsa & mix enough to blend it in. Carefully (you don't want to slosh the peas & chicken around too much!) pour the egg mixture on top of the chicken & peas & place on burner til the fritatta gets firm around the edges & isn't watery. Then sprinkle cheese on top & place in an oven heated to 350 until the cheese is melted & fritatta is firm. Just watch it so you don't burn it!
Cut into 8 slices like a pie!

*You can flavor with salt substitute & pepper, fat free butter spray, put it on top of brown rice or if you want something to dip it with...... try nonfat greek yogurt mixed w salsa! It's really good with a fritatta!!!!
*Prepared this way ..... each slice is 60 calories, 3.4 carbs & 7 grams of protein!

Protein Packed Brunch!

Happy Thursday! I had a great Leap Year yesterday & I hope you did too! I didn't post this yesterday but.........I officially have a fitness partner to work out with & I am so excited! I have pretty much always worked out by myself so I am looking forward to having someone that can keep me motivated &  try new things with! I have to say that I haven't had the most intense work outs these last 2 days because there's a lot of talking & laughing going on but it's been great! We'll have to get used to working out together & try to keep our gym faces on!  It's going to be hard because we are both cut ups but we also both have fitness goals in mind so that will keep us focused! And who said workouts can't be fun anyway?! ;) We are both going to jump into phase 2 of the Jamie Eason Live Fit Trainer on Monday & I can't wait!!!!
So, ok.........I got up an hour earlier this morning & ate my oatmeal w 1/2 scoop of protein powder (nothing jazzy about em today!) so by the time I got to the gym at 9:15 I was already hungry & by the time we were done I was STARVING!!!!! So,  when I got home form the gym, I popped a whole grain protein waffle (from the recipe I made earlier in the week) in the toaster & whipped up an egg & 3 whites, poured em on top of the waffle & melted a slice of 2% colby jack cheese on top! A sprinkle of salt substitute & pepper  & a protein shake on the side & WOOP.....there it is! A protein packed brunch that is sure to keep me full for awhile! It was so good too! The cinnamon-y - vanilla flavored waffle w the eggs & cheese tasted so yummy together! (I am definitely going to have to try it with cinnamon & Stevia sweetened eggs sometime too!) This brunch (minus the shake) rang the breakfast bell at 250 calories, 7 carbs &  25 grams of protein!

Dinner Nosh- Clean Country BFD (aka breakfast for dinner)

So I have to say that today was a really good Friday but I'm glad the work week is done & the weekend is here again!! I'm ready to sleep in tomorrow morning! (well, I usually don't sleep late but at least I don't have to set an alarm!) I think I will have my breakfast in bed since its been a couple of weeks since I did that....... Already thinking about breakfast & it's not even 6 pm yet! Ha! Guess dinner tonight is to blame for breakfast being on my brain!!
Well I'm a big fan of eggs.... Especially for dinner! They have 0 carbs, high in protein & low in calories. Not to mention they really go with a lot of things! And with tomorrow being Saturday - the day I choose to have a cheat this weekend (if I have one) I thought a hearty yet lean BFD sounded perfect!!
First I grated 3 oz of a russet potato to make home made hash browns & "fried" them w butter cooking spray til they were toasty looking, then I added 1 whole egg & 2 egg whites that I had scrambled w 3 slices of my Turkey Meets Italian Meatloaf to get it all nice & hot..... Then I piled it all on the hash browns & sprinkled w 1/8 c of 2% reduced fat mozzarella cheese & BAM!!! I cleaned up a classic country breakfast that, if made the old fashioned way, would have caused major artery damage! But, not this recipe! It rang the dinner bell for 315 calories, 39 grams of protein & 12 carbs!! See, by only eating 1 whole egg & using whites for the other 2, making your own hash browns from a real potato & skipping really frying them in oil & replacing extra lean turkey where bacon would have been, you have a super delicious, yet super clean & healthy, southern dinner!! .... Breakfast for dinner that is! ;)
P.s. I didn't put it in the pic but I used 1 tbsp of reduced sugar ketchup for dippin'! Yes, I'm a ketchup on my eggs kinda gurl! Actually...... I'm just a fan of the stuff! What can i say?! But the full out real stuff is packed w carbs & sugar so I spend the extra dime for the reduced sugar! It's only 5 calories & 1 gram of carbs & sugar!.... & was totally yummy w this meal!
