Dinner Nosh- Clean Country BFD (aka breakfast for dinner)
So I have to say that today was a really good Friday but I'm glad the work week is done & the weekend is here again!! I'm ready to sleep in tomorrow morning! (well, I usually don't sleep late but at least I don't have to set an alarm!) I think I will have my breakfast in bed since its been a couple of weeks since I did that....... Already thinking about breakfast & it's not even 6 pm yet! Ha! Guess dinner tonight is to blame for breakfast being on my brain!!
Well I'm a big fan of eggs.... Especially for dinner! They have 0 carbs, high in protein & low in calories. Not to mention they really go with a lot of things! And with tomorrow being Saturday - the day I choose to have a cheat this weekend (if I have one) I thought a hearty yet lean BFD sounded perfect!!
First I grated 3 oz of a russet potato to make home made hash browns & "fried" them w butter cooking spray til they were toasty looking, then I added 1 whole egg & 2 egg whites that I had scrambled w 3 slices of my Turkey Meets Italian Meatloaf to get it all nice & hot..... Then I piled it all on the hash browns & sprinkled w 1/8 c of 2% reduced fat mozzarella cheese & BAM!!! I cleaned up a classic country breakfast that, if made the old fashioned way, would have caused major artery damage! But, not this recipe! It rang the dinner bell for 315 calories, 39 grams of protein & 12 carbs!! See, by only eating 1 whole egg & using whites for the other 2, making your own hash browns from a real potato & skipping really frying them in oil & replacing extra lean turkey where bacon would have been, you have a super delicious, yet super clean & healthy, southern dinner!! .... Breakfast for dinner that is! ;)
P.s. I didn't put it in the pic but I used 1 tbsp of reduced sugar ketchup for dippin'! Yes, I'm a ketchup on my eggs kinda gurl! Actually...... I'm just a fan of the stuff! What can i say?! But the full out real stuff is packed w carbs & sugar so I spend the extra dime for the reduced sugar! It's only 5 calories & 1 gram of carbs & sugar!.... & was totally yummy w this meal!
